Chicken in Spanish Tomato Sauce with Rice and crushed almonds and chopped spring onions

Ingredients (serves 4)

  • 4 Chicken Fillets
  • 400g Rice
  • 100g Almonds
  • 4 Spring Onion
  • 3 Tablespoons of Olive Oil
  • 1 Tin Chopped Tomatoes
  • 1 Small Onion
  • 1\2 Teaspoon Dried Oregano
  • 1\2 Teaspoon Dried Basil
  • 1 Flat Teaspoon of Ground Black Pepper
  • 1 Teaspoon Of Sugar
  • 3 Tablespoons of Tomato Puree

Method

  1. Take a frying pan and add olive oil
  2. Chop Small Onion and fry until soft
  3. Add Chicken to pan
  4. Add oregano, basil, black pepper, salt and sugar
  5. Add Chopped Tomatoes and Tomato Puree
  6. Cook for approximately 40 minutes.
  7. 15 minutes before the sauce is ready, boil the rice.
  8. While the rice is boiling crush the almonds and chop the spring onion.
  9. When the rice is ready, drain and add the crushed almonds and spring onion.
  10. Enjoy!
